A great Indian style recipe using tofu seasoned with cumin, coriander, garam masala and turmeric spices.
Accompany with store-bought-samosa!
This is another great vegan recipe learnt from the Adventist cooking class, thank you Dr Thomas Joseph for sharing your skill!
Ingredients
* 1 pack Firm Tofu – scramble with a fork
* 3/4 cup Tomato Pasta Sauce/Tomato Puree
* 2 Onions, finely chopped
* 2 Tablespoons Oil
* 2 teaspoons Ginger-Garlic Paste
* 1 teaspoon Cumin seeds
* 1 teaspoon salt
* 1 Tablespoon Coriander powder
* 1/2 Tablespoon Cumin powder
* 1 teaspoon Garam Masala
* 1/4 teaspoon Turmeric powder
Optional:
1 Tablespoon Lemon/Lime Juice
1/2 cup Coriander leaves chopped
1 can of diced Tomatos/puree for a moister end result
Utensils
* Knife and chopping board for tofu
* Frying Pan
* Pot for rice
* Orange juicer for fresh lemon
Method
Heat 2T oil in a pan, fry 1t cumin seeds until brown. Add chopped onions and 1t salt, sauté until brownish.
Sauté 2t ginger-garlic paste.
Mix together 1T Coriander, 1/2T Cumin and 1/4t Turmeric powders with a little water, add to pan.
Add the scrambled firm Tofu, fry until dry.
Now add Pasta Sauce/Tomato puree.
Just before removing from heat, mix in 1t Garam Masala and 1T lemon juice.
Enjoy with friends :-)

As the onions fry, wash 2 cups of rice in a sieve. Bring to the boil, then let simmer in the background until water is absorbed.
Sauté 2t ginger-garlic paste.
Mix together 1T Coriander, 1/2T Cumin and 1/4T Turmeric powders with a little water, add to pan.
Add the scrambled firm Tofu. You can scramble the tofu with a fork, or simply dice it up :-)
Fry until dry.
Now add 3/4 cup Pasta Sauce/Tomato puree. We used a single serving of 140g tomato puree. Two servings of this puree or 3/4 cup of “Dolmio” etc pasta sauce would work well.
Just before removing from heat, mix in 1t Garam Masala and 1T lemon juice.
Enjoy with friends :-) Served over rice, with samosa.
Frozen vegetable samosa, available at all good supermarkets. Normally located by the frozen corn, pies etc, they cost about $7 for 50 samosa.
Coat with oil, heat at 180 degrees C for about 15m. Check on them, and turn them over after 10 minutes.
